  • Flour: helps thicken the cheesy filling
  • Egg: for brushing over the pastry
  • Cream cheese: creamy, light and tangy
  • Blue cheese: strong and bold and really gives these appetizers a grown-up feel
  • Green onion and parsley: adds freshness and delicious paired with cheese
  • Pepper: for seasoning (there’s no need for salt)

Time-saving tips for party appetizers

Prep well in advance and tidy-up early. Having all the ingredients, decoration and various items on hand helps you focus on the meal-prep.

When cooking for groups, bite sized, easy appetizers and meats are best made in bulk and go a long way to feed hungry guests. You could also do the food potluck-style where everyone brings something to share.

Prep Ahead Appetizer

Appetizers are perfect in that you can do a lot of prep work ahead of time, then simply assemble or bake them before or throughout the party. These Creamy Blue Cheese Puff Pastry Squares require only minutes of prep and feed a large crowd.

This recipe makes 18 cheesy, flaky pastry pockets worthy of any holiday party.

Simply mix together the creamy topping and prep the pastry base. These versatile pastry sheets can make all sorts of holiday appetizers, whether it’s a crust, wrap, topping or anything you can think of.

How to make Puff Pastry Square appetizers

  1. To make the puff pastry squares, score a thin line close to the edge and bake the squares for 10 minutes at 400 degrees.
  2. Press down the centers and bake 5 to 8 minutes until golden brown.
  3. Press down again to create the pastry pockets
  4. Fill with a creamy blue cheese mixture.

Pro tip: To make them even more golden and flaky, brush the tops with an egg wash before baking.

Do I have to use puff pastry?

No, you don’t have to use Pepperidge Farm puff pastry or generic frozen puff pastry sheets. You could use pie crust or even phyllo pastry, but puff pastry works best for this recipe.

If you use other pastry they won’t puff up as much as puff pastry and won’t give you the delicious buttery flavor and flaky texture. Also, be aware that you will probably have to use other pastries with a muffin pan to shape them into little cups for holding the filling.

Puff pastry is super easy because it holds its shape really well.

What cheese to use for puff pastry appetizers

If you find blue cheese too strong or have different cheeses you want to use up then baked brie, cheddar, fontina or gruyere would all work well. You want to go for a harder cheese so it doesn’t melt too quickly also look out for a bolder cheese that will keep its flavor when melted.

Tips for making these pastry squares

  • You can make the filling in advance and store it in the fridge
  • Leftovers will keep in the fridge for around 3 days
  • You can also make the pastry squares in advance so they are ready to assemble when you need them
  • Parsley can be replaced with basil or chives (if using chives omit the green onions)
  • If you want to use a different cheese go for a good melting one with a strong flavor

Ingredients

  • 2 sheets puff pastry, (1 package) defrosted
  • 1 tablespoon flour
  • 1 large egg, lightly beaten
  • 8 ounces cream cheese, room temp
  • 4 ounces blue cheese, crumbled
  • 2 stalks green onions, sliced
  • 1 tablespoon fresh minced parsley
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 400° F. Unfold pastry sheets onto a lightly floured surface. Cut each into 9 three-inch squares.
  • Using a sharp knife, lightly score ½-inch in from edges to create an inner square. Poke centers multiple times with a fork. Lightly brush tops with egg.
  • Place pastry square on a parchment lined baking sheet one inch apart, bake 10 minutes. Remove from oven and flatten centers with the back of a spoon.
  • Bake 5-8 minute more until golden brown. Remove from oven and press centers down one more time to create pockets.
  • In a medium bowl, stir together cream cheese and remaining ingredients until combined. Spoon about 1 tablespoon into each puff pastry center.
  • Garnish with additional green onion slices and serve immediately.
