Bacon and Egg Sweet Potato Toasts

Crisp bacon, scrambled eggs, avocado, and cheese over sweet potato slices create this wholesome and unique breakfast recipe. With only a few ingredients and about 15 minutes you can enjoy these any time, even on a weekday.

It’s a simple recipe of sweet potato slices, avocado, scrambled eggs, cheese, and bacon. This adds up to a complete meal in one and a unique breakfast recipe. It’s simple enough to make as a before-work breakfast, but could also work as a fancy brunch recipe.

Breakfast Sweet Potato Toasts

These sweet potato toasts can replace in recipes such as these breakfast sweet potato toasts. Here are the simple steps to make them:

  1. Cook bacon: Cook slices in a large non-stick pan or skillet over medium-high heat. Rotate every 1 to 2 minutes until crisp, about 5 minutes. Drain, cool slightly and crumble.
  2. Scramble eggs: Lightly beat eggs with a bit of half and half, plus salt and pepper to taste. Grease pan and cook over medium heat. Stir and fold often until eggs are cooked and fluffy. Set aside.
  3. Heat Sweet PotaTOASTS according to the package directions.
  4. Top each with a bit of smashed avocado, scrambled eggs, shredded cheese, and bacon. Serve immediately.

Ingredients

  • 4 slices bacon
  • 4 large eggs
  • 1 tablespoon half and half
  • Salt and pepper to taste
  • 4 slices Sweet PotaTOASTS
  • 1 medium avocado, smashed
  • ¼ cup shredded cheddar cheese

Instructions
