How To Make Keto Almond Joy Cookies

  1. Preheat the oven to 350º F. Line 2 large baking sheets with parchment paper. Set aside.
  2. In a large bowl, combine the butter and sugar with a hand or stand mixer on medium speed.
  3. Mix in the eggs and vanilla until combined.
  4. Add the almond flour, coconut flakes, almonds, salt, and baking soda. Mix until well combined. The batter will be thick at this point.
  5. Fold in the chocolate chips with a spatula.
  6. Scoop roughly 1-inch round balls onto the baking sheets, pressing them down lightly to flatten the tops. Leave about 1 inch of space between the cookies and the edges of the pan.
