I can’t get enough of the summer here in the Bay Area and have enjoyed plenty of outdoor time. This Nutella No Bake Cheesecake with fresh strawberries celebrates this spirit of summer and togetherness with fresh, seasonal flavors, without the need of a hot oven indoors.
Ingredients in a no bake Nutella cheesecake
This simple No Bake Cheesecake uses only a handful of ingredients and a pre-made graham cracker crust to save time (note you can make your own crust if you prefer). Cream cheese, sugar, sour cream and fresh whipped cream creates a fluffy, creamy pie filling that requires no baking. This sits on top of rich and creamy Nutella spread. It’s airier than your standard cheesecake, but requires a fraction of the time and effort.
How to make simple syrup glaze for fruit tarts and pies
To make simple syrup glaze: Stir together ⅓ granulated sugar, ½ cup filtered water and 1-tablespoon squeezed orange juice in a saucepan over medium heat. Bring to boil then simmer on low for 5 minutes. Remove from heat and bring to room temp. Brush over top of the fruit.
Fresh fruit on top of tarts and pies will oxidize after a day or so, even in the fridge. The sugar acts as a preservative and also adds a nice shine. The citric acid in fresh squeezed orange juice also protects the fruit.
How to make homemade graham cracker crust for cheesecake
- 1-½ cups finely ground graham cracker crumbs
- 6 tablespoons butter melted
- ¼ teaspoon salt
Stir together in a medium bowl until well combined and graham cracker pieces are damp. Press into bottom of 9 or 10-inch pie pan. Bake 7-10 minutes at 350º F or until firm. Cool to room temperature before filling if making a no-bake cheesecake.
Can I top this with other berries?
I find the pairing of strawberries and Nutella works well, but you could also top this with blueberries, blackberries or raspberries. If you are unable to find quality berries in season or have cherries on hand, you’ll love this Old Fashioned Cherry Cheesecake.

Strawberry Nutella No Bake Cheesecake
Ingredients
- 1 10-inch graham cracker crust, store bought or homemade
- ¼ cup hazelnut chocolate spread, Nutella
- 1 cup heavy whipping cream
- 1 (8-ounce) package cream cheese, room temp
- ½ cup granulated sugar
- ½ cup sour cream
- 1 teaspoon vanilla extract
- 3 cups fresh strawberries, halved
- 1 cup semi-sweet chocolate chips, or chocolate sauce
- 1 tablespoon butter
Instructions
- Evenly spread hazelnut spread onto bottom of crust.
- In a medium bowl, beat heavy cream with a mixer on high until stiff peaks form, about 7 minutes.
- In a separate large bowl beat the cream cheese, sugar, sour cream and vanilla until smooth. Fold in whipped cream. Spoon into crust and refrigerate at least an hour to firm. Garnish with strawberry pieces.
- In small bowl melt chocolate chips and butter in microwave at 30 second increments, stirring often, until melted. Drizzle over cheesecake pie.
Notes
- If storing cheesecake as leftovers, lightly coat strawberries with a simple syrup glaze to protect fruit from oxidizing.
