What a refreshing taco recipe! I’m in Puerto Vallarta, Mexico right now – land of fabulous tacos – and I can tell you that this fun porkless twist on tacos is unique and fabulous. These would be a huge hit here with American and Canadian expats and in Guadalajara too! When I’m back in California I’ll put on some festive music and cook up a special batch of these Tropical tacos for my hubby. I’m pinning this awesome recipe to a group recipe board right now. 🙂
