Summer grilling might be one of my favorite activities around food…besides eating it, photographing it, writing about it, talking about it. Okay maybe it would be better to say I love everything about food, and grilling is one part of that.

For these pollock burgers I went with homemade mango guacamole. Rich and creamy avocado, mango, lime, red onion and spices. This recipe is full of healthy fats and nutrient dense. Prepare in a whole-wheat bun, or lighten it up even more and go protein style! Even the fish burger and guacamole is a healthy, satisfying meal.

Wild Pollock Fish Burgers with Mango Guacamole

Lean protein fish burgers with a creamy mango guacamole.

Ingredients

  • 4 Trident Seafoods Wild Alaskan Pollock Burgers
  • 1 ripe avocado
  • ½ mango chopped
  • Juice from one lime
  • 2 garlic cloves
  • 2 tablespoons minced red onions
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 whole-wheat hamburger buns
  • Cilantro as garnish

Instructions

  1. Preheat grill to medium heat. Cook fish burgers 4-5 minutes on each side, until heated through. Alternately cook on stovetop in a pan or skillet the same way.
  2. Meanwhile: In a medium bowl, mash avocado and stir in remaining ingredients through pepper.
  3. Top burgers with guacamole and serve in buns (toasted if desired), garnished with cilantro.
