For these pollock burgers I went with homemade mango guacamole. Rich and creamy avocado, mango, lime, red onion and spices. This recipe is full of healthy fats and nutrient dense. Prepare in a whole-wheat bun, or lighten it up even more and go protein style! Even the fish burger and guacamole is a healthy, satisfying meal.

Ingredients

  • 4 Fish burgers, store-bought
  • 1 ripe avocado
  • ½ mango, chopped
  • Juice from one lime
  • 2 garlic cloves
  • 2 tablespoons minced red onions
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 whole-wheat hamburger buns
  • Cilantro as garnish

Instructions

  • Preheat grill to medium heat. Cook fish burgers 4-5 minutes on each side, until heated through. Alternately cook on stovetop in a pan or skillet the same way.
  • Meanwhile: In a medium bowl, mash avocado and stir in remaining ingredients through pepper.
  • Top burgers with guacamole and serve in buns (toasted if desired), garnished with cilantro.
