Bacon and Egg Sweet Potato Toasts

  • 4 slices bacon
  • 4 large eggs
  • 1 tablespoon half and half
  • Salt and pepper to taste
  • 4 slices Sweet PotaTOASTS
  • 1 medium avocado smashed
  • ΒΌ cup shredded cheddar cheese


  • Cook bacon in a large non-stick pan or skillet over medium-high heat. Rotate every 1 to 2 minutes until crisp, about 5 minutes. Drain, cool slightly and crumble. Set aside.
  • Lightly beat eggs with half and half, salt, and pepper to taste.
  • Grease pan and heat to medium heat. Pour in eggs. Stir and fold often until cooked and fluffy, about 4 minutes. Remove from heat.
  • Heat Sweet PotaTOASTS according to the package directions.
  • Top each toast with a bit of smashed avocado, scrambled eggs, shredded cheese, and bacon. Serve immediately.
