Bacon and Egg Sweet Potato Toasts
Crisp bacon, scrambled eggs, avocado and cheese over sweet potato slices for a wholesome and unique breakfast recipe.

- 4 slices bacon
- 4 large eggs
- 1 tablespoon half and half
- Salt and pepper to taste
- 4 slices Sweet PotaTOASTS
- 1 medium avocado smashed
- ¼ cup shredded cheddar cheese
Cook bacon in a large non-stick pan or skillet over medium-high heat. Rotate every 1 to 2 minutes until crisp, about 5 minutes. Drain, cool slightly and crumble. Set aside.
Lightly beat eggs with half and half, salt, and pepper to taste.
Grease pan and heat to medium heat. Pour in eggs. Stir and fold often until cooked and fluffy, about 4 minutes. Remove from heat.
Heat Sweet PotaTOASTS according to the package directions.
Top each toast with a bit of smashed avocado, scrambled eggs, shredded cheese, and bacon. Serve immediately.
