  • 1 cup long grain rice uncooked
  • 2 tablespoons peanut oil divided
  • 3 large chicken breasts cut into ½-inch pieces (about 1 ½ pounds)
  • 3 cups fresh broccoli florets
  • 1 large orange bell pepper diced
  • 8 ounces water chestnuts drained
  • ½ cup soy sauce
  • 2 tablespoon sesame oil
  • 1 romaine lettuce hearts
  • 1 cup wonton strips
  • Sesame seeds and green onions as garnish


  • Cook rice according to package directions and set aside.
  • Meanwhile: Heat 1-tablespoon peanut oil in a wok or large pan to high heat. Add chicken and cook 5-7 minutes, stirring often, until cooked through and opaque. Remove from pan.
  • Heat remaining peanut oil to high heat. Add broccoli and bell pepper and stir fry 5 minutes, or until just tender. Reduce heat to medium and stir in water chestnuts, soy sauce, sesame oil, cooked chicken and rice. Cook a few minutes to heat through. Spoon desired amount of stir fry mixture onto lettuce leaves and garnish with wonton strips, sesame seeds and green onions.
