One Pot Tropical Shrimp Stir Fry with Coconut Rice

  • 1 tablespoon coconut oil
  • 1 large onion diced
  • 2 large red or orange bell peppers largely chopped
  • 2 stalks green onion sliced
  • 1 pound raw shrimp peeled and deveined
  • ½ cup drained pineapple chunks
  • ¼ cup coconut milk
  • 2 tablespoons liquid aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon chili paste
  • 2 packages Lucky Elephant Coconut Thai Hom Mali Jasmine Rice


  • Heat coconut oil in large non-stick pan or wok to medium heat. Add onion and cook 3-4 minutes, stirring often, until fragrant. Stir in bell pepper and green onion, cook 4-6 minutes more until tender. 
  • Add shrimp and cook 2-3 minutes, or until opaque. Stir in remaining ingredients except for rice. Continue cooking until warm. Remove from heat.
  • Cook rice according to package direction (90 seconds in microwave). Serve with tropical shrimp and vegetable mixture.
