I’ve enjoyed homemade mac and cheese often, but I’ve also had my share of boxed variety. Being older, I need to watch what I eat better. This Gluten-Free Mac and Cheese with Goat Cheese will satisfy your nostalgic craving, without the guilt.
While I don’t have any specific gluten sensitivities that I know of, a little bit of moderation never hurt. This recipe will show you easy gluten-free substitutes so you can still enjoy things like mac and cheese, even if you are on a gluten-free diet.
How to make mac and cheese gluten-free?
The most obvious swap is to use gluten-free pasta. There’s plenty of rice flour noodles available at most stores. On top of that, it adds extra protein and fiber to your gluten-free mac and cheese.
The cheese sauce is typically made with a roux, which is melted butter and flour. Once the milk is added and simmered, it thickens into a sauce. A simple gluten-free alternative is to use cornstarch, which thickens up just as easily. Then mix in shredded cheese and stir until melted into a cheesy sauce.
Unique additions to mac and cheese
This homemade gluten-free mac and cheese isn’t just a replacement for your basic boxed variety. Goat cheese and roasted red bell peppers create a bold and unique flavor. I’ve still included shredded cheddar to keep the sauce extra gooey.

Gluten-Free Mac and Cheese with Goat Cheese and Roasted Peppers
Equipment

Ingredients
- 16 ounces gluten-free elbow pasta
- 4 cups milk
- ½ cup heavy cream
- ⅓ cup cornstarch
- 1 teaspoon salt
- ½ teaspoon black pepper
- 5 tablespoons butter
- 8 ounces Goat Cheese crumbled
- 3 cups shredded cheddar cheese divided
- ½ cup drained roasted red bell peppers chopped
Instructions
- Preheat oven to 425 F. Bring a large pot of lightly salted water to a boil. Add gluten-free pasta. Cook according to package directions, stirring occasionally, until cooked through but slightly firm. Drain and rinse with cool water to stop cooking, set aside.
- In a large bowl, whisk together milk, cream, cornstarch, salt and pepper until smooth. Set aside.
- Heat butter in a large saucepan over medium heat until melted. Pour in milk and cornstarch mixture, stirring to combine. Continue cooking, stirring constantly, until sauce thickens, 5-8 minutes.
- Slowly stir in goat cheese and 2 cups shredded cheddar. Continue stirring until melted and smooth. Toss together with cooked pasta and roasted peppers.
- Pour into a casserole or 8x8 baking dish. Sprinkle with remaining cheese and bake 10-12 minutes, until cheese is melted. Broil top, watching carefully, to brown if desired.

Putting goat cheese with gluten free pasta is fantastic! The A1 beta casein protein in cow dairy (that drives some towards goat and sheeps milk products) looks similar to gluten protein to the body. So it is the perfect combo for those of us sensitive to both. And it’s delicious.
