Do I have to use puff pastry?
No, you don’t have to use Pepperidge Farm puff pastry or generic frozen puff pastry sheets. You could use pie crust or even phyllo pastry, but puff pastry works best for this recipe.
If you use other pastry they won’t puff up as much as puff pastry and won’t give you the delicious buttery flavor and flaky texture. Also, be aware that you will probably have to use other pastries with a muffin pan to shape them into little cups for holding the filling.
Puff pastry is super easy because it holds its shape really well.
What cheese to use for puff pastry appetizers
If you find blue cheese too strong or have different cheeses you want to use up then baked brie, cheddar, fontina or gruyere would all work well. You want to go for a harder cheese so it doesn’t melt too quickly also look out for a bolder cheese that will keep its flavor when melted.

Creamy Blue Cheese Puff Pastry Squares
Ingredients
- 2 sheets puff pastry (1 package) defrosted
- 1 tablespoon flour
- 1 large egg lightly beaten
- 8 ounces cream cheese room temp
- 4 ounces blue cheese crumbled
- 2 stalks green onions sliced
- 1 tablespoon fresh minced parsley
- ½ teaspoon black pepper
Instructions
- Preheat oven to 400° F. Unfold pastry sheets onto a lightly floured surface. Cut each into 9 three-inch squares.
- Using a sharp knife, lightly score ½-inch in from edges to create an inner square. Poke centers multiple times with a fork. Lightly brush tops with egg.
- Place pastry square on a parchment lined baking sheet one inch apart, bake 10 minutes. Remove from oven and flatten centers with the back of a spoon.
- Bake 5-8 minute more until golden brown. Remove from oven and press centers down one more time to create pockets.
- In a medium bowl, stir together cream cheese and remaining ingredients until combined. Spoon about 1 tablespoon into each puff pastry center.
- Garnish with additional green onion slices and serve immediately.
